Details

These hearty skewers come together in a flash- perfect for picnics, parties, or just delicious snacking. The horseradish dip can be made a day ahead. The recipe can be easily doubled. Customize by swapping ham, corned beef, or turkey for the roast beef!

Ingredients

1 cup (226 g) sour cream
¼ cup (52 g) mayonnaise
5 teaspoons (25 g) prepared horseradish
1 tablespoon (3 g) chopped, fresh parsley
pinch salt
28 PRETZILLA® Soft Pretzel Bites
4 oz (113 g) aged cheddar cut into equal pieces
2 teaspoons (10 g) honey mustard
7 1 oz (28 g) slices deli roast beef
2 lightly packed cups arugula, (40 g )
14 small grape or cherry tomatoes

Preparation

1 – To prepare horseradish dip, combine the first 5 ingredients (sour cream through salt) in a small bowl. Cover and chill at least one hour and up to 1 day in advance.

2 – To prepare skewers, prepare pretzel bites according to package directions, thread 1 pretzel bite on a 6 – 8” inch skewer. Brush one side of a cheese piece with honey mustard and thread onto skewer so that the mustard touches the pretzel bite. Cut roast beef slices in half crosswise. Working with one piece roast beef at a time, fold into a bite-sized square; thread onto skewer. Top roast beef with 2 – 3 folded arugula leaves, a second pretzel bite, and finish with a tomato. Repeat with remaining ingredients and skewers. Serve skewers with horseradish dip.
